  • 2 (8 ounce) chicken breast fillets
  • 3 cloves of garlic
  • 1/2 cup white mushrooms
  • 1/2 pound dried 3-cheese tortellini (Barilla)
  • 1/2 pound asparagus
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup dry white wine
  • 1/2 cup Reggiano Parmigiano

Cooking Directions

  1. Chop garlic finely and cut asparagus into thirds
  2. Clean chicken, trim fat, season with salt and pepper, then cut into kabob like chunks
  3. Heat large pan medium-to-high with olive oil, then add garlic and simmer for 2-3 minutes
  4. Add chicken to pan and cook until edges begin to turn white
  5. Add asparagus, mushroom, white wine, salt and pepper and add cover lid to pan, cook for 15 minutes
  6. Boil pasta water and when ready, add tortellini
  7. Cook tortellini for 8-9 minutes, just under al dente
  8. When tortellini is cooked, drain water and add tortellini to pan then cook at low temperature for another 5 minutes
  9. Remove pan from stove and add grated Reggiano Parmigiano
  10. Ready to serve
