Tortellini with Chicken, Asparagus, Mushroom Recipe

Ingredients
- 2 (8 ounce) chicken breast fillets
- 3 cloves of garlic
- 1/2 cup white mushrooms
- 1/2 pound dried 3-cheese tortellini (Barilla)
- 1/2 pound asparagus
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 cup dry white wine

1/2 cup Reggiano Parmigiano
Cooking Directions
- Chop garlic finely and cut asparagus into thirds
- Clean chicken, trim fat, season with salt and pepper, then cut into kabob like chunks
- Heat large pan medium-to-high with olive oil, then add garlic and simmer for 2-3 minutes
- Add chicken to pan and cook until edges begin to turn white
- Add asparagus, mushroom, white wine, salt and pepper and add cover lid to pan, cook for 15 minutes
- Boil pasta water and when ready, add tortellini
- Cook tortellini for 8-9 minutes, just under al dente
- When tortellini is cooked, drain water and add tortellini to pan then cook at low temperature for another 5 minutes
- Remove pan from stove and add grated Reggiano Parmigiano
- Ready to serve
