Ingredients
- 12 cherry tomatoes
- 1 large tomato
- 1/2 pound linguine (Barilla)
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 4 cloves garlic
- 1/2 cup fresh basil
- 1/3 cup Pecorino Romano
Cooking Directions
- Chop fresh basil and garlic in thin slices, then cut cherry tomatoes in half and large tomato into thick chunks
- Add olive oil to large pan with garlic and let simmer for 2-3 minutes at medium to high heat
- Add tomatoes, basil, salt and pepper and change heat to low
- Add pot of water to oven and boil. When ready, add pasta (linguine or spaghetti) and cook for 7 minutes or until al dente
- Drain pasta and add linguine to pan
- Mix and stir for 2 minutes and add Pecorino Romano, then serve
