Ingredients

  • 2 (8 oz.) pork fillets
  • 1/2 cup spinach
  • 6 cherry tomatoes
  • 1 ounce Pecorino Romano chunks
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 6 toothpicks

Cooking Directions

  1. Clean pork and cut a slice in each fillet to create a deep pocket
  2. Season both sides of pork with salt and pepper, then add cherry tomatoes sliced in half, spinach and chunks of Pecorino Romano within the pork
  3. Close pork and place 3 toothpicks across fillet
  4. Add olive oil to large pan heat 2 minutes, then place pork in pan and sear for 7 minutes per side at medium-to-high heat
  5. Transfer to plate and ready to serve
