Sausage with Spinach and White Wine Sauce Pasta Recipe

Ingredients

  • 4 Italian sweet sausages
  • 4 cloves of garlic
  • 3/4 pound rotini multi-grain pasta (Barilla)
  • 1/4 cup white wine
  • 3 cups fresh spinach
  • 4 tablespoons olive oil
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1/2 cup Pecorino Romano

Cooking Directions

  1. Clean sausages and then remove outside casing (skin) and ground/crumble pork into a bowl. Season with salt and pepper
  2. Chop garlic finely and add to pan with 3 tablespoons of olive oil at medium-to-high heat
  3. Add sausage to pan with garlic and cook at high heat for 5-7 minutes until sausage begins to brown
  4. Once sausage browns, lower heat to medium and add white wine, then cover pan with lid
  5. Clean spinach and after 15 minutes of sausage, garlic, wine sauce cooking, add spinach to pan and cook for another 10 minutes while the sauce reduces
  6. Boil pasta water and when ready, add rotini
  7. Cook rotini for 8 minutes, just under al dente
  8. When rotini is cooked, drain pasta water and add to pan with sausage, spinach, garlic, and white wine sauce stirring for several minutes
  9. Remove from stove and add pinch of salt and pepper, tablespoon of olive oil, and grated Pecorino Romano and continue to stir
  10. Ready to serve
