Sausage with Spinach and White Wine Sauce Pasta Recipe

Ingredients
- 4 Italian sweet sausages
- 4 cloves of garlic
- 3/4 pound rotini multi-grain pasta (Barilla)
- 1/4 cup white wine
- 3 cups fresh spinach
- 4 tablespoons olive oil
- 1 tablespoon salt
- 1 tablespoon pepper
- 1/2 cup Pecorino Romano
Cooking Directions
- Clean sausages and then remove outside casing (skin) and ground/crumble pork into a bowl. Season with salt and pepper
- Chop garlic finely and add to pan with 3 tablespoons of olive oil at medium-to-high heat
- Add sausage to pan with garlic and cook at high heat for 5-7 minutes until sausage begins to brown
- Once sausage browns, lower heat to medium and add white wine, then cover pan with lid
- Clean spinach and after 15 minutes of sausage, garlic, wine sauce cooking, add spinach to pan and cook for another 10 minutes while the sauce reduces
- Boil pasta water and when ready, add rotini
- Cook rotini for 8 minutes, just under al dente
- When rotini is cooked, drain pasta water and add to pan with sausage, spinach, garlic, and white wine sauce stirring for several minutes
- Remove from stove and add pinch of salt and pepper, tablespoon of olive oil, and grated Pecorino Romano and continue to stir
- Ready to serve
