Spanish Pork with Parsley in Artichoke White Wine Sauce Recipe

Ingredients
- 2 (8 oz.) pork fillets
- 1 cup fresh parsley
- 4 ounces marinated artichoke hearts
- 1/4 cup Spanish dry white wine
- 2 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 garlic cloves
Cooking Directions
- Clean pork and cut into strips, then wash garlic and parsley and chop finely.
- Season both sides of all pork strips with salt, pepper and olive oil and then cover generously with fresh parsely
- Add olive oil to pan and add garlic at medium-to high heat for 2-3 minutes then add pork
- Cook pork for 5-6 minutes on one side and then turn over, adding artichoke and white wine then lowering heat to low-medium and place cover on pan, cooking for another 8-10 minutes
- Open pan cover and raise heat slightly, allowing sauce to reduce into pork then remove from stove, let sit for 5 minutes and then serve
