Ingredients

  • 2 (8 oz.) pork fillets
  • 1 cup fresh parsley
  • 4 ounces marinated artichoke hearts
  • 1/4 cup Spanish dry white wine
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 garlic cloves

Cooking Directions

  1. Clean pork and cut into strips, then wash garlic and parsley and chop finely.
  2. Season both sides of all pork strips with salt, pepper and olive oil and then cover generously with fresh parsely
  3. Add olive oil to pan and add garlic at medium-to high heat for 2-3 minutes then add pork
  4. Cook pork for 5-6 minutes on one side and then turn over, adding artichoke and white wine then lowering heat to low-medium and place cover on pan, cooking for another 8-10 minutes
  5. Open pan cover and raise heat slightly, allowing sauce to reduce into pork then remove from stove, let sit for 5 minutes and then serve
