Peas, Onions, and Prosciutto (Piselli, Cipolle e Prosciutto) Recipe

Ingredients
- 2 cups frozen or fresh peas
- 1 small onion
- 1 tablespoon olive oil
- 4 thin slices Prosciutto di Parma
- pinch salt and pepper
Cooking Directions
- Slice onion thinly and tear Prosciutto di Parma into thin pieces
- Heat olive oil in pan for 2-3 minutes at medium-high heat
- Add onions and cook for 5 minutes or until onions caramelize into the oil
- Once onions have caramelized, add peas, salt, and pepper. Stir gently for a few minutes and cover pan for 10 minutes (if using frozen peas, allow an extra 5 minutes to cook)
- Uncover pan and add proscuitto and gently stir, then cover pan again
- Let cook for another 5 minutes, stir gently, then remove from pan and serve
