Orzo, Squash, and Feta Cheese Dinner Recipe

Ingredients
- 1/2 pound orzo
- 1 red onion
- 1 squash
- 1 vine tomato
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 cup Feta cheese
- 1/2 cup sliced white mushrooms
- 1/4 cup fresh parsley
Cooking Directions
- Slice squash, red onion, and chop fresh parsley and tomato
- Add olive oil to pan at medium heat for 3-5 minutes then add red onion, squash, and fresh parsley
- After 5 minutes, add squash, mushrooms, and tomato and cook at low heat for 20 minutes
- Boil pasta water and when ready, add orzo and cook for 11 minutes or until al dente
- Add 2 tablespoons of pasta water to pan with vegetable sauce
- Drain orzo and add to pan with vegetables, then add Feta cheese
- Take off stove, stir and let sit for 2-3 minutes
- Ready to serve
