Ingredients
- 1/2 pound orzo
- 1 red bell pepper
- 1 green bell pepper
- 1 sweet onion
- 2.5 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 Cup Reggiano Parmigiano
- 2 cloves garlic
Cooking Directions
- Chop garlic finely and slice peppers and onions thinly
- Add olive oil to pan at medium heat for 3-5 minutes
- Add garlic, peppers, onions, salt and pepper. Saute at high heat for 10 minutes, then return to medium heat and cover pan.
- Boil pasta water and when ready, add orzo and cook for 11 minutes or until al dente
- Drain pasta water and add orzo to pan with peppers, onions, and garlic
- Stir for 3-5 minutes and add Reggiano Parmigiano and teaspoon of olive oil
- Take off stove and ready to serve
