Ingredients
- (2) 5-8 ounce pork chops
- 1 clove of garlic
- 1 lemon
- 2 tablespoons olive oil
- 1 teaspoon pepper
- pinch salt
- 2 tablespoons fresh oregano
Cooking Directions
- Clean and wash pork chops
- Chop garlic finely and slice lemon in half
- Season pork with pepper and salt, then place into a plastic bag to be placed in refrigerator, with olive oil, garlic, oregano and then squeeze lemon halves into bag without seeds
- Let marinade for at least 30 minutes
- Fire up charcoal grill with chimney starter filled with lump hardwood charcoal and ignited by a paper towel dressed with olive oil underneath (do not use lighter fluid). Add a few cherry wood chips into the chimney starter for an additional lite, smokey flavor
- When coals are grey, dump into charcoal pit and place grates back on grill and use olive oil dressed paper towel to oil the grates gently (use a long cooking thong as to not burn yourself)
- Place pork chops over coals at medium-to-high heat and let sear for 3-4 minutes on each side
- Then move pork to a medium heat on the grill and close grill cover for 5 minutes per side (pork will sweat nicely and become moist)
- Remove pork from grill, let cool for several minutes and then serve
