Chicken, Penne, and Spinach Recipe with Garlic and Reggiano Parmigiano

Ingredients
- 2 (8 ounce) chicken breast fillets
- 4 cloves of garlic
- 1/2 pound penne multi-grain pasta (Barilla)
- 2 cups fresh spinach
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 cup Reggiano Parmigiano
Cooking Directions
- Chop garlic finely then clean chicken, trim fat, season with salt and pepper, and cut into chunks
- Heat large pan medium-to-high with olive oil
- Add chicken to pan and cook until edges begin to turn white
- Add garlic, salt and pepper
- Boil pasta water and when ready, add penne
- Cook penne for 8 minutes, just under al dente
- When penne is cooked, add 1/3 ladel cup of pasta water to pan with chicken and garlic, drain pasta then add to pan
- Add fresh spinach then cover pan for 8-10 minutes
- Remove pan from stove and add grated Reggiano Parmigiano
- Ready to serve
