  • 4 slices Rustic Italian bread
  • handful arugula
  • 1 Roma tomato
  • 1 can White Albacore tuna
  • 3 thin slices red onion
  • 2 tablespoons Italian olive oil
  • pinch salt
  • pinch pepper
  • 1 teaspoon Italian capers
  • 1 tablespoon Red wine vinegar
  • 1/4 cup fresh parsley

Cooking Directions

  1. Add white Albacore tuna to a bowl and add fresh parsley chopped, red onions finely chopped, olive oil, red wine vinegar, salt, pepper, and capers then stir well
  2. Toast Italian rustic bread then add tuna mixture on top one slice of bread
  3. Slice tomato finely and add on top of tuna with arugula and add a drizzle of olive oil
  4. Add other slice of toast on top and enjoy
