Ingredients
- 4 slices Rustic Italian bread
- handful arugula
- 1 Roma tomato
- 1 can White Albacore tuna
- 3 thin slices red onion
- 2 tablespoons Italian olive oil
- pinch salt
- pinch pepper
- 1 teaspoon Italian capers
- 1 tablespoon Red wine vinegar
- 1/4 cup fresh parsley
Cooking Directions
- Add white Albacore tuna to a bowl and add fresh parsley chopped, red onions finely chopped, olive oil, red wine vinegar, salt, pepper, and capers then stir well
- Toast Italian rustic bread then add tuna mixture on top one slice of bread
- Slice tomato finely and add on top of tuna with arugula and add a drizzle of olive oil
- Add other slice of toast on top and enjoy
