  • 3 cups arugula
  • 1/2 cup olive oil
  • 1 lemon
  • pinch salt
  • pinch pepper
  • 1 tomato
  • 1/3 red onion
  • 1 garlic clove
  • 1/4 cup fresh parsley
  • 1 tablespoon white wine vinegar
  • 1 ounce Pecorino Fiore di Sardegna
  • 1 ounce Pecorino Romano

Cooking Directions

  1. Wash and rinse all vegetables and herbs thoroughly then add arugula to serving bowl/plate
  2. Chop tomato and into chunks and dice or Julienne slice red onions and add over arugula
  3. In a separate bowl add olive oil then add lemon zest with pinch of salt and pepper
  4. Slice lemon in half and squeeze juice into bowl (remove any seeds) then add white wine vinegar and whisk for 5 minutes
  5. Take Pecorino Romano and Pecorino Fiore di Sardegna and shave cheese strips over arugula salad
  6. Add olive oil and lemon dressing over arugula salad or serve salad on separate plates with dressing added
